Ingredients
- 1 avocado sliced into 2 halves, seed removed
- 4 to 6 slices of sour dough bread
Salsa mixture:
- 1 punnet grape cherry tomato, diced
- 1 small jalapeno, finely chopped
- 1/4 red onion, chopped
- 1 teaspoon garlic, finely chopped
- Coriander to taste, chopped
- 1 tablespoon extra virgin olive oil
- Pinch of ground cumin
- Pinch of sea salt
Method:
- In a large bowl, gently toss salsa ingredients together.
- Spoon a generous amount of salsa onto avocado halves. Top with a sprinkling of cumin and salt.
- Spoon desired amount onto bread to serve.
