Ingredients
- 1 rasher of crispy prosciutto
- 2 rounds of crispy hot salami
- 2 stems of coriander, green part only, finely chopped
- 1 tablespoon dukkah
- a pinch of sea salt
- 1 wedge of lime to rim the glass
- 180ml Bloody Mary Mix, pre-chilled
- 50ml hot BBQ sauce
- 1 tablespoon freshly squeezed lime juice
- 1 teaspoon Sriracha Hot Sauce
- Celery stalks for garnish
- Pickles, olives, salami, cherry tomatoes for garnish
Method:
- Place prosciutto and salami slices into a frying pan. Slowly bring up the heat to crisp them up. Once cooled, crush into a rough crumb. Combine crumbs with the chopped coriander stems, dukkah and salt to make a rub. Rim 2 glasses with the lime wedge and the rub.
- In a shaker, pour in the Bloody Mary Mix, BBQ sauce, lime juice and hot sauce. Shake well.
- Pour into rimmed glasses and garnish with celery stalk, extra prosciutto, cherry tomatoes, pickles and olives.
