Ingredients
- 200g Shale Point Brie
- ¼ cup fig jam
- 2 tbsp dried figs, chopped
- 1 tbsp cranberries, chopped
- 2 tbsp pistachios, chopped
- 1 tsp fresh thyme leaves, plus extra to garnish

Method:
- Preheat oven to 220°C (fan-forced 200°C). Line a tray with baking paper. Combine jam, figs, cranberries, pistachios and thyme in a small bowl. Place brie on prepared tray, top with jam mixture and bake for 10 mins. Serve with crackers or crostini.
