  • 5 dehydrated citrus slices
  • 5 dehydrated apple slices
  • 1 cup dried cranberries
  • 1/2 cup almonds

SPICES

  • 3 cinnamon quills
  • 10 star anise
  • 10 cardamom pods
  • 2 tablespoons cloves
  • 2 teaspoons nutmeg
  • 2 teaspoons ground ginger or ginger bread spices
  • 2 vanilla beans or 2 teaspoons pure vanilla extract

HERBS

  • 2 Bay leaves
  • 2 to 4 sprigs Conifer or pine needles
  • 2 to 4 sprigs rosemary

LIQUEUR & SWEETENERS

  • 1/2 cup Dark rum or bourbon
  • 1 cup Maple syrup
  • 1/2 cup Honey

LIQUID

  • cranberry juice and, or
  • apple juice, enough to cover the ingredients, plus more for top-up.

METHOD:

Place your selected ingredients in a medium pot and bring to a gentle boil for 1/2 hour. Once pot pourri becomes fragrant, turn to a very low simmer. This can be kept simmering throughout the day with the occasional top up of juice. Just keep an eye on the pot while simmering!
