Banana Hot Cross Bun Pudding

The weather is finally cooling down. We all need something warm and sweet to celebrate Easter. This golden caramelised custard like pudding is a real homespun dessert that’ll make everyone HOPPY this Easter.

Serves 6

Ingredients:

  • 6 fruit hot cross buns-cut into 2.5cm square pieces
  • 60g melted unsalted butter
  • 4 eggs
  • 2 cups full cream milk
  • 1/2 cup sugar
  • Punch of ground cinnamon
  • Pinch of ground nutmeg
  • Pinch of sea salt

Topping Sauce

  • 60g unsalted butter
  • 1 cup full cream milk
  • 1 tbsp cornstarch
  • 1/3 cup golden syrup
  • 2 firm bananas-cut into 2cm rounds
  • 1/2 cup dark chocolate chips
  • Mix berries

Method

  1. Pre heat oven to 180°C.
  2. Place hot cross bun cubes in a greased heavy based casserole pot. Pour in melted butter and toss gently to coat.
  3. In a medium bowl, lightly beat eggs; add milk, sugar, cinnamon, nutmeg and salt.
  4. Pour over bun cubes and mix gently to coat. Bake uncovered for 40 minutes or until a knife inserted in the center comes out clean.
  5. To make the sauce, melt butter in a small saucepan. Mix together milk, corn starch and golden syrup until combined. cook over medium heat until the mixture comes to a boil. Stir and cook for 1 minute.
  6. Remove from the heat. Pour over cooked pudding and top with banana rounds and choc chips.
  7. Return to oven and cook for further 10 minutes.
  8. Serve warm with fresh berries and a dusting of icing sugar.
