Ingredients
- 2 mangoes, diced
- 1 avocado, diced
- 2 Lebanese cucumbers, diced
- 24 cooked tiger prawns
- 24 baby gem lettuce leaves
- Fresh chives, to garnish
- Cocktail sauce
- 2 tbsp whole egg mayonnaise
- 2 tbsp Meander Valley Dairy Crème Fraîche
- 2 tbsp tomato sauce
- 1 tbsp lemon juice
- 2 tsp Worcestershire sauce
- ½ tsp Tabasco sauce
- ¼ tsp smoked paprika

Method:
- For the cocktail sauce, mix together all ingredients in a medium bowl. Chill.
- Place mango, avocado, cucumber and chilli in a medium bowl. Season and stir to combine.
- Arrange lettuce leaves on a platter. Place a prawn on each leaf and top with mango mixture. Drizzle over dressing and garnish with chopped chives.
