Serves 6
Ingredients:
- 3 tsp cumin
- 3 tsp paprika
- 1 tsp ground coriander
- ½ tsp cayenne pepper
- 5 crushed garlic cloves
- ¼ cup olive oil
- ¼ cup red wine vinegar
- 18 lamb cutlets
- Fresh coriander
- Parsley leaves
Method
- In a large bowl combine 3 tsp cumin, 3 tsp paprika, 1 tsp ground coriander and 1/2 tsp cayenne pepperwith5 crushed garlic cloves, 1/4 cup olive oil and 1/4 cup red wine vinegar.
- Add 18 lamb cutlets, coating them with the marinade, cover and chill for 2 hours.
- Bring back to room temperature before cooking. Heat barbecue grill on medium and cook lamb for 3-4 minutes on each side. Allow to rest.
- Season and sprinkle with fresh coriander and parsley leaves.
