Wongbok Apple Slaw Salad

Ingredients
Serves 4

  • 1/4 wongbok cabbage
  • 1 large pink lady apple
  • 1/4 red onion
  • 150g The Nut Market Goji Berry Trail Mix

Dressing

  • 40ml light soy sauce
  • 2 tbsp lime juice
  • 1 tsp seeded mustard
  • 1 tsp sesame oil
  • 2 tsp white sugar

Method:

  1. Chop wongbok, apple, and onion into slim batons. Place in a large bowl. Sprinkle the trail mix over the salad.
  2. To make the dressing, combine all the ingredients and whisk till well incorporated.
  3. Pour over salad and toss to coat completely.

To keep the salad for a day or two, keep the dressing separate. Toss and mix when ready to consume.
