{"id":1620,"date":"2020-05-12T12:43:21","date_gmt":"2020-05-12T02:43:21","guid":{"rendered":"https:\/\/www.hawthornegarage.com.au\/?p=1620"},"modified":"2020-09-01T13:00:41","modified_gmt":"2020-09-01T03:00:41","slug":"choc-filled-jam-drop-cookies","status":"publish","type":"post","link":"https:\/\/www.hawthornegarage.com.au\/choc-filled-jam-drop-cookies\/","title":{"rendered":"Choc Filled or Jam Drop Cookies"},"content":{"rendered":"<p style=\"font-weight: 400;\"><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>200g shelled roasted pistachios-divided into 2 lots (100g for coating, 100g for dough)<\/li>\n<li>1 cup + 1 tablespoon cup plain flour<\/li>\n<li>Pinch of salt<\/li>\n<li>150g unsalted butter, softened<\/li>\n<li>1\/2 cup caster sugar<\/li>\n<li>1 tsp vanilla extract<\/li>\n<li>1 egg white<\/li>\n<li>Icing sugar for dusting<\/li>\n<\/ul>\n<p style=\"font-weight: 400;\"><strong>Choc filling:<\/strong><\/p>\n<ul>\n<li>1 1\/2 cups of good quality chocolate chips<\/li>\n<li>4 tablespoons full cream<\/li>\n<\/ul>\n<p style=\"font-weight: 400;\"><strong>Jam Drops:<\/strong><\/p>\n<ul>\n<li>1 cup Raspberry\/strawberry mix jam<\/li>\n<li>1\/2 lemon, juiced<\/li>\n<\/ul>\n<p style=\"font-weight: 400;\"><strong>Method:<\/strong><\/p>\n<ul>\n<li>Preheat oven to 170\u00b0C with top and bottom racks. Line two baking trays with baking paper. Set aside.<\/li>\n<\/ul>\n<p style=\"font-weight: 400;\"><strong>For the crust:<\/strong><\/p>\n<ul>\n<li>In a food processor, pulse 100g pistachios until coarsely chopped. Set aside for coating cookies later.<\/li>\n<\/ul>\n<p style=\"font-weight: 400;\"><strong>For the dough:<\/strong><\/p>\n<ul>\n<li>Combine remaining pistachios and the tablespoon of flour. Pulse in the processor until finely ground, resembling bread crumbs.<\/li>\n<li>Whisk together the ground pistachio flour, the cup of plain flour and salt in a medium bowl. Set aside.<\/li>\n<\/ul>\n<p style=\"font-weight: 400;\"><strong>To make the dough:<\/strong><\/p>\n<ul>\n<li>In a cake mixer, cream butter and sugar on medium high speed until light and fluffy, for approx 4 to 5 minutes. Add vanilla extract and beat till combined. Reduce speed and slowly add ground pistachio flour mixture, scraping down sides of bowl until a soft dough is formed.<\/li>\n<li>In a small bowl, whisk egg white until frothy. Roll dough into 2.5cm diameter balls (approx 25g each).<\/li>\n<li>Lightly dampen a palm with whisked egg white, roll cookie balls till coated, then roll in crushed pistachios until evenly encrusted.\u00a0Place cookie balls 4cm apart on the baking sheets.<\/li>\n<li>Using a rounded end of a wooden spoon, press down into the centre of cookie to create a crater, pushing until just before reaching the base. Re-shape cookies if necessary.<\/li>\n<li>Bake cookies for 18 minutes, rotating halfway until they turn a light golden brown. Allow cookies to cool completely before dusting with icing sugar.<\/li>\n<\/ul>\n<p style=\"font-weight: 400;\"><strong>Choc Filled Cookies:<\/strong><\/p>\n<ul>\n<li>Place choc chips and cream into a small metal mixing bowl and melt over low heat in a bain marie until just melted and shiny. Remove from heat. (This can also be done in the microwave with short spurts of heating and stirring a few times until melted).<\/li>\n<li>Spoon a small amount of melted chocolate into the crater of the cookies. Let set.<\/li>\n<\/ul>\n<p style=\"font-weight: 400;\"><strong>Jam Drop Cookies:<\/strong><\/p>\n<ul>\n<li>In a small saucepan, heat jam mixture and lemon juice until it starts to bubble. Spoon jam into centre of cookies.<\/li>\n<li>Allow jam to cool and set before serving.<\/li>\n<\/ul>\n<p><em>Tip:<\/em> May be stored in an airtight container with baking paper between
