{"id":1659,"date":"2020-06-01T12:24:02","date_gmt":"2020-06-01T02:24:02","guid":{"rendered":"https:\/\/www.hawthornegarage.com.au\/?p=1659"},"modified":"2020-06-01T12:25:14","modified_gmt":"2020-06-01T02:25:14","slug":"nellys-ultimate-fritters","status":"publish","type":"post","link":"https:\/\/www.hawthornegarage.com.au\/nellys-ultimate-fritters\/","title":{"rendered":"Nelly\u2019s Ultimate Fritters"},"content":{"rendered":"<p><span>This fritter batter recipe creates a versatile, light golden, stay-crunchy fritter batter for sweet or savoury dishes.\u00a0Excellent for bananas, apples, rhubarb, as well as fish, prawns, scallops and stick veggies.\u00a0<\/span><\/p>\n<p><strong>Dry Ingredients:<\/strong><\/p>\n<ul>\n<li><span>1 cup self raising flour<\/span><\/li>\n<li><span>1 cup sieved plain rice cracker powder-<em>the secret ingredient\u00a0<\/em><\/span>(ground finely 100g of plain rice crackers in a grinder)<\/li>\n<li><span>2 tbsp corn flour<\/span><br \/>\n<span>2 tbsp pure icing sugar (1 tablespoon if using for savoury dishes)<\/span><\/li>\n<\/ul>\n<p><strong>Wet ingredients:<\/strong><\/p>\n<ul>\n<li><span>2 tbsp cooking oil<\/span><\/li>\n<li><span>2 cups water<\/span><\/li>\n<li><span>1 1\/2 cup buttermilk\u00a0<\/span><\/li>\n<li><span>Rice bran oil or any neutral flavour oil for frying<\/span><\/li>\n<\/ul>\n<p><span><strong><em>Extra flavouring (optional):<\/em><\/strong><\/span><\/p>\n<p><span><strong>Savoury<\/strong><em><br \/>\n<\/em><\/span><span><em>+ 1\/2 teaspoon of:<\/em><\/span><\/p>\n<ul>\n<li><span>Chilli flakes<\/span><\/li>\n<li><span>Turmeric<\/span><\/li>\n<li><span>Paprika<\/span><\/li>\n<li><span>Celery salt<\/span><\/li>\n<li><span>Sriracha hot sauce<\/span><\/li>\n<li><span>Sesame seeds<\/span><\/li>\n<li><span>Curry powder<\/span><\/li>\n<\/ul>\n<p><span><strong>Sweet<\/strong><em><br \/>\n<\/em><\/span><span><em>+ 1\/2 teaspoon of:<\/em><\/span><\/p>\n<ul>\n<li><span>Sesame seeds<\/span><\/li>\n<li><span>Vanilla essence\u00a0<\/span><\/li>\n<li>Desiccated coconut<\/li>\n<li>Almond slivers<\/li>\n<li><span>and to finish;<\/span><\/li>\n<li><span>A drizzle of honey or maple syrup<\/span><\/li>\n<li><span>Choc or Nutella sauce<\/span><\/li>\n<li><span>Peanut butter<\/span><\/li>\n<li><span>Lime juice<\/span><\/li>\n<li><span>Ground Cinnamon\u00a0<\/span><\/li>\n<li><span>Icing sugar<\/span><\/li>\n<\/ul>\n<p><strong>Method:<\/strong><\/p>\n<ol>\n<li><span>In a large mixing bowl, whisk together all the dry ingredients until combined.\u00a0<\/span><\/li>\n<li><span>Slowly stir in the wet ingredients a little bit at a time until batter is smooth. Add more water if required. A tablespoon at a time until a thick creamy, but not drizzly consistency is reached.\u00a0<\/span><\/li>\n<li><span>In a saucepan, deep fryer or a wok, heat enough oil to cook the food of your choice.\u00a0<\/span><\/li>\n<li><span>To test if oil is hot enough, scoop a teaspoon of batter into the hot oil. If it bubbles up, oil is ready, or when oil temperature reaches 155\u00b0C.\u00a0<\/span><\/li>\n<li><span>To cook, dip your choice of food into the batter and let the excess liquid drip off.\u00a0<\/span><\/li>\n<li><span>To fry, gently slide coated items on an angle into hot oil. Do not dunk in!\u00a0<\/span><\/li>\n<li><span>Fry until golden brown. Do not overcrowd the oil.\u00a0<\/span><\/li>\n<\/ol>\n<p><strong>Tips:<\/strong><\/p>\n<ul>\n<li><em>Lady\u2019s fingers bananas are more suitable for fritters.<\/em><\/li>\n<li><em>Granny Smith Apples are delicious for frying.<\/em><\/li>\n<li><em>Dry ingredients may be halved for a smaller batch. Store unused half in an airtight container for up to 6 months. Adjust wet ingredients accordingly. \u00a0\u00a0<\/em><\/li>\n<li><em>Always finish with a light dusting of sea salt for both sweet and savoury dishes to achieve the Umami flavour!\u00a0<\/em><\/li>\n<li><span> <\/span><span><em>Drain fried food on a rack. Never on paper towel. They will turn soggy later!<\/em><\/span><\/li>\n<li><span><em>This batter does not require double frying.
