Ingredients\u00a0<\/strong><\/p>\n

The Crust<\/strong><\/span><\/p>\n

  • 180g butter<\/span><\/li>\n
  • 1\/3 cup caster sugar<\/span><\/li>\n
  • 1 1\/2 cups plain flour<\/span><\/li>\n<\/ul>\n

    The<\/strong><\/span>\u00a0<\/span>Curd<\/strong><\/span><\/p>\n

    • 4 eggs<\/span><\/li>\n
    • 1 cup mixed berries*<\/span><\/li>\n
    • 1 cup caster sugar<\/span><\/li>\n
    • 4 tablespoons plain flour<\/span><\/li>\n
    • 1\/4 cup lemon juice<\/span><\/li>\n
    • Rind of 1 lemon<\/span><\/li>\n<\/ul>\n

      Garnish
      <\/span>Icing sugar for dusting
      <\/span>Mint leaves
      <\/span>Slices of lemon<\/span><\/p>\n

      Method<\/strong><\/p>\n

        \n
      1. Preheat oven to 180\u00b0C. Line a 24cm square baking pan with parchment paper, leaving extra paper over the rim for easy lifting after baking.<\/span><\/li>\n
      2. In an electric mixer, cream butter and sugar until pale in colour, then add flour gradually until a dough is formed. Press dough evenly onto sides and base of pan to form a flat surface.\u00a0<\/span><\/li>\n
      3. Bake for 15 minutes.\u00a0<\/span><\/li>\n<\/ol>\n

        In the meantime, make the filling\u2026.<\/strong><\/p>\n

        1. In an electric mixer, whisk eggs and sugar until smooth. Add flour and combine well. Add lemon juice, rind and berries. Stir gently to incorporate.<\/span><\/li>\n
        2. Once crust is baked, pour in filling.<\/span><\/li>\n
        3. Cool in the fridge completely before lifting tarte out of the pan, dust with icing sugar and garnish with more berries and mint leaves.\u00a0<\/span><\/li>\n<\/ol>\n

          *Cut strawberries into smaller pieces if using.\u00a0<\/span><\/p>\n
