{"id":3762,"date":"2022-02-07T11:14:58","date_gmt":"2022-02-07T01:14:58","guid":{"rendered":"https:\/\/www.hawthornegarage.com.au\/?p=3762"},"modified":"2022-02-07T11:14:58","modified_gmt":"2022-02-07T01:14:58","slug":"berrylicious-cheesecake","status":"publish","type":"post","link":"https:\/\/www.hawthornegarage.com.au\/berrylicious-cheesecake\/","title":{"rendered":"Berrylicious Cheesecake"},"content":{"rendered":"<p><strong>Ingredients<\/strong><\/p>\n<ul>\n<li>450g mixed Berries<\/li>\n<li>150g Amaretti biscotti<\/li>\n<li>50g melted unsalted butter<\/li>\n<li>Pinch of sea salt<\/li>\n<li>3\/4 cup pure cream<\/li>\n<li>250g mascarpone-room temperature<\/li>\n<li>125ml low fat sour cream-room temperature<\/li>\n<li>2 tablespoons sugar<\/li>\n<li>2 tablespoons lemon juice<\/li>\n<li>1 teaspoon lemon zest<\/li>\n<li>180g white chocolate-broken into rough pieces<\/li>\n<li>1 tablespoon butter<\/li>\n<li>Mint leaves and icing sugar for garnish<\/li>\n<\/ul>\n<p><strong>Method:<\/strong><\/p>\n<ol>\n<li>In a blender pulse biscotti into crumbs. Add the melted butter and pinch of salt and mix well. Set aside.<\/li>\n<li>In a medium bowl, whip the cream until just firm and shiny.<\/li>\n<li>In another bowl, whisk together the mascarpone, sour cream, sugar, lemon juice and zest until smooth.<\/li>\n<li>Melt the white chocolate and 1 tablespoon butter in a small bowl over low boiling water or in the microwave on medium heat in short spurts. Stir well to combine.<\/li>\n<li>Add melted chocolate to cream cheese mixture in small batches and beat until fully incorporated.<\/li>\n<li>Gently fold the whipped cream until combined.<\/li>\n<li>Reserve 4 teaspoons of biscotti mixture for topping later. Divide the remaining crumbs among 4 serving glasses and press down lightly to form a flat surface.<\/li>\n<li>Layer the glasses with cheesecake mixture and berries. Repeat the process until all cheesecake mixture is used. Top with berries and a final sprinkling of crumbs.<\/li>\n<li>Serve chilled.
