Ingredients<\/h4>\n

Pumpkin and seasoning<\/h4>\n
    \n
  • 1kg pumpkin cut into cubes<\/li>\n
  • 4 peeled garlic cloves<\/li>\n
  • 1\/4 cup of extra virgin olive oil<\/li>\n
  • 2 tsps sea salt<\/li>\n
  • 1 tsp smoked paprika<\/li>\n
  • 1 tsp dried oregano<\/li>\n
  • 1 tsp cumin<\/li>\n
  • 1 tsp chilli flakes, optional<\/li>\n<\/ul>\n

    Salsa dip<\/h4>\n
      \n
    • 1\/2 cup sour cream<\/li>\n
    • 1 jar 330g mild salsa<\/li>\n
    • 1 cup shredded tasty cheddar<\/li>\n
    • Tortilla chips to serve<\/li>\n
    • 1 lime<\/li>\n
    • Coriander for garnish, optional<\/li>\n<\/ul>\n\t\t<\/div>\n\t\t\t\t\t<\/div>\n\n\t\n\n\t

      Method:<\/h4>\n

        • Preheat oven to 180\u00b0C
          \n<\/span>– Combine pumpkin and seasoning ingredients until well coated.
          \n– Line a large sheet pan with baking paper. Spread pumpkin out onto pan in a single layer and bake for 45 mins or until soft when pricked with a fork.
          \n– Let cool slightly.<\/li>\n
        • Pulse pumpkin in a food processor until a rustic consistency is achieved.<\/li>\n
        • Stir in sour cream and mix well.<\/li>\n
        • Transfer mixture into a large serving bowl.
          \n– Make a crater in the centre of the mixture with a large spoon.<\/li>\n
        • Pour salsa into the crater. While still warm, spread the cheddar round the surface of mixture.<\/li>\n
        • Garnish with a dollop of sour cream, chopped coriander, and a sprinkling of smoked paprika.<\/li>\n
        • Surround the dip with tortilla chips<\/li>\n<\/ul>\n

          Can be served warm or chilled with a fresh squeeze of lime.<\/p>\n

          Leftover dip may be used as a sauce for roast dinners.<\/p>\n
